ANSON MILLS GRITS
also called "hominy"- a shortened version of the old South term for fresh ground whole corn "Hominy Grist". Common processed grits have had their skins and germs removed, wherein lies most of the good stuff. Anson Mills produces very coarse grits with fresh germ and meal separated, sifted, cleaned and mixed by hand into the final product to preserve fresh corn flavor, texture and nutrition. They cold mill their corn using organic whole heirloom seed corn. Unlike most commercially produced grits Anson's are perishable and must be refrigerated or frozen.
